The Woman Next Door (La Femme d'a cote) (1981) [Bernard Coudray]: Shot in the head by Fanny Ardant while making love with her, just before she shoots herself as well.
The Return of Martin Guerre (La Retour de Martin Guerre) (1982) [Martin Guerre]: Executed by hanging. (Thanks to Constantine)
Danton (1983) [Danton]: Presumably executed by the guillotine. (I haven't seen this movie, but I'm familiar with the historic facts.)
Jean de Florette (1986) [Jean de Florette]: Fatally injured in an explosion when he tries to blow a hole in the ground to get water; he dies shortly afterwards in his home, with Daniel Auteuil and Ernestine Mazurowna by his side. (Thanks to Hamish)

Uranus (1990) [Leopold]: My memory of this movie is vague, but I believe he was shot to death during an argument or riot in Gerard's tavern.
Germinal (1993) [Toussaint Maheu]: Shot in the chest by a policeman during a protest outside the mine.
A Pure Formality (Una Pura formalita) (1994) [Onoff]: Commits suicide by shooting himself in the head, a short time before the story begins; after a lengthy period of being interviewed by Roman Polanski in the "police station," Gerard finally remembers that he is actually dead and that the station is the afterlife.
